Akidi Soup

Ingredients
- 3 cups akidi beans, washed
- 500 g assorted meat
- 200 g stockfish, soaked and cleaned
- 150 g smoked fish
- 1/2 cup palm oil
- 1 medium onion
- 2 tablespoons ground crayfish
- 2 red bell peppers, blended
- 1 scotch bonnet pepper
- 1 teaspoon seasoning powder
- 1 teaspoon salt
- 2 cups meat stock
- 1 handful sliced uziza or scent leaves
How to make it
- Wash the akidi beans and pick out debris.
- Soak stockfish until soft, wash and remove bones.
- Cook the assorted meat until tender and reserve the stock.
- Boil the akidi beans in fresh water until tender; this can take 45 to 60 minutes depending on the beans.
- Heat palm oil in another pot and sauté the chopped onion.
- Add blended pepper and cook for 6 to 8 minutes.
- Add crayfish, seasoning, salt and meat stock.
- Add the cooked akidi, meat and stockfish.
- Simmer for 10 to 15 minutes so the flavours combine.
- Add smoked fish and sliced leaves near the end.
- Cook for 3 minutes, taste and adjust seasoning.
