Chicken Suya

Thin slices of seasoned chicken grilled over heat and coated with a spicy suya spice blend.

Ingredients

  • 1 kg boneless chicken thighs or breast
  • 3/4 cup ground suya spice, yaji
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1 onion, sliced for serving
  • 2 tomatoes, sliced
  • 1 cucumber, sliced
  • Wooden skewers, soaked if grilling

How to make it

  1. Cut chicken into thin strips or bite sized pieces for quick cooking.
  2. Mix suya spice, salt, garlic, ginger and oil. Coat the chicken thoroughly and marinate for at least 30 minutes.
  3. Thread chicken onto soaked skewers without packing the pieces too tightly.
  4. Grill over medium high heat or bake at 220°C, turning every 7 to 10 minutes until browned and cooked through.
  5. Brush lightly with oil and sprinkle extra yaji during the final minute if desired.
  6. Rest for 3 minutes and serve with sliced onions, tomatoes and cucumber.
