Coconut Candy

Ingredients

  • 2 cups freshly grated coconut
  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon vanilla
  • Pinch of salt

How to make it

  1. Combine sugar and water and bring to a boil.
  2. Cook until the syrup begins to thicken.
  3. Add coconut and salt.
  4. Stir continuously over medium low heat until thick and pulling away from pan.
  5. Add vanilla and mix.
  6. Scoop onto a greased tray and allow to cool and set.
