Ingredients

  • 2 cups peeled black eyed beans
  • 1/2 cup palm oil
  • 2 red peppers
  • 1 Scotch bonnet pepper
  • 1 small onion
  • 100 g ground crayfish
  • 2 seasoning cubes
  • 1 teaspoon salt
  • 3 cups meat stock
  • 200 g cooked beef or assorted meat

How to make it

  1. Pick and wash the beans. Soak for several hours if desired to shorten cooking time.
  2. Boil beans in fresh water until completely soft. Blend until smooth, adding cooking water as needed.
  3. Heat palm oil and sauté chopped onion for 1 minute.
  4. Add pepper blend, crayfish, seasoning cube, salt and meat stock. Simmer for 10 minutes.
  5. Stir in the blended beans and cook on low heat for 15 to 20 minutes, stirring often so the bottom does not catch.
  6. Add cooked meat and adjust thickness with stock or water.
  7. Serve with ewedu and Nigerian stew, traditionally alongside amala.
