Jollof Spaghetti

Nigerian style spaghetti cooked in rich pepper and tomato jollof sauce.

Ingredients

  • 400 g spaghetti
  • 2 cups blended tomatoes
  • 1 red bell pepper, blended
  • 1 scotch bonnet pepper
  • 1 medium onion, chopped
  • 3 tablespoons vegetable oil
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon seasoning powder
  • 1/2 teaspoon salt
  • 2 cups chicken stock
  • 300 g cooked chicken, optional

How to make it

  1. Boil spaghetti until slightly undercooked and drain.
  2. Heat oil and fry onion for 2 minutes.
  3. Add tomato paste and fry for 1 minute.
  4. Add blended tomatoes and peppers and cook for 10 minutes.
  5. Season with thyme, curry, seasoning and salt.
  6. Add chicken stock and simmer.
  7. Add spaghetti, cover and cook on low heat for 8 to 10 minutes.
  8. Fold in cooked chicken if using and serve.
