Ingredients

  • 1 kg very lean beef
  • 1 cup ground roasted peanuts or peanut powder
  • 1/2 cup water
  • 3 tablespoons yaji or ground pepper
  • 1 tablespoon ginger powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 seasoning cube
  • 2 tablespoons tomato paste
  • 1 tablespoon honey or sugar, optional

How to make it

  1. Freeze beef for 30 to 45 minutes so it becomes firm. Slice into very thin sheets across the grain.
  2. Arrange slices on a rack and dry in a low oven at about 70 to 90°C until firm and mostly dry. A food dehydrator can also be used.
  3. Blend peanut powder with water, yaji, ginger, garlic, paprika, salt, seasoning cube and tomato paste to form a thick coating.
  4. Brush a very thin layer of the coating over each dried beef slice.
  5. Return to the low oven and dry until the coating sets and the beef becomes crisp but not burnt.
  6. Cool completely before storing in an airtight container.
