Ingredients

  • 3 cups rice
  • 1/2 cup cooked rice
  • 1 teaspoon active dry yeast
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 cup warm water, plus more as needed
  • Vegetable oil for greasing

How to make it

  1. Wash and soak the raw rice for 6 to 8 hours or overnight.
  2. Drain and blend the soaked rice with the cooked rice, yeast, sugar, salt and enough warm water to make a thick smooth batter.
  3. Cover and leave in a warm place for 6 to 8 hours to ferment.
  4. Stir the fermented batter and add a little water if it is too thick.
  5. Heat a masa pan or small nonstick pan and grease lightly.
  6. Pour batter into each cavity or make small rounds in the pan.
  7. Cook until bubbles form and the underside is golden.
  8. Turn and cook the other side.
  9. Repeat with the remaining batter.
