Ingredients

  • 1.5 kg chicken pieces
  • 6 plum tomatoes
  • 4 red bell peppers
  • 2 scotch bonnet peppers
  • 2 medium onions
  • 1/2 cup vegetable oil
  • 1 tablespoon tomato paste
  • 2 teaspoons curry powder
  • 1 teaspoon dried thyme
  • 2 seasoning cubes
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 cup chicken stock

How to make it

  1. Wash the chicken and season with salt, curry, thyme and one seasoning cube.
  2. Blend tomatoes, peppers and one onion.
  3. Prepare the chicken stock by simmering the seasoned chicken until partly tender.
  4. Heat oil in a heavy pot and fry the chicken pieces until lightly browned; remove and set aside.
  5. Add chopped onion to the oil and cook until soft.
  6. Stir in tomato paste and cook for 2 minutes.
  7. Add blended tomato and pepper mixture.
  8. Cook uncovered for 15 to 20 minutes, stirring periodically, until the sauce reduces and the oil begins to separate.
  9. Add chicken stock, paprika, remaining seasoning and salt.
  10. Return the chicken and simmer for 15 to 20 minutes until completely cooked.
  11. Taste and adjust seasoning.
