Nigerian Egg Sauce

Simple Nigerian egg sauce made with ripe tomatoes, peppers and warming spices.

Ingredients

  • 6 large eggs
  • 3 ripe tomatoes, chopped
  • 1 red bell pepper, chopped
  • 1 scotch bonnet pepper
  • 1 medium onion, chopped
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon thyme
  • 1 teaspoon seasoning powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

How to make it

  1. Boil the eggs for 9 to 10 minutes, cool, peel and cut into halves or quarters.
  2. Blend tomatoes, bell pepper and scotch bonnet coarsely.
  3. Heat oil and sauté onion for 2 minutes.
  4. Add blended vegetables and cook for 10 to 12 minutes until the sauce thickens.
  5. Add curry, thyme, seasoning, salt and black pepper.
  6. Gently place the boiled eggs into the sauce.
  7. Spoon sauce over the eggs and simmer for 3 to 5 minutes.
  8. Taste and serve hot.
