Ingredients
- 1 kg firm fish such as croaker or tilapia
- 5 plum tomatoes
- 4 red bell peppers
- 2 scotch bonnet peppers
- 2 onions
- 1/2 cup vegetable oil
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 2 seasoning cubes
- 1 teaspoon salt
- 1 cup fish stock
How to make it
- Clean the fish and cut into serving pieces.
- Season lightly with salt and thyme.
- Blend tomatoes, peppers and one onion.
- Shallow fry or grill the fish briefly until firm; do not cook it to dryness.
- Heat oil and sauté chopped onion.
- Add tomato paste and fry for 2 minutes.
- Add blended pepper and tomato and cook for 15 minutes until thick.
- Add curry, seasoning, salt and fish stock.
- Gently place the fish pieces into the sauce.
- Simmer for 8 to 10 minutes without vigorous stirring.
- Taste and adjust seasoning.
