Nigerian Meat Pie

Ingredients

  • 500 g all purpose flour
  • 250 g cold butter or margarine
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 120 to 160 ml cold water
  • 300 g minced beef
  • 2 medium Irish potatoes, diced
  • 2 medium carrots, diced
  • 1 small onion, chopped
  • 1 tablespoon vegetable oil
  • 1 teaspoon curry powder
  • 1/2 teaspoon thyme
  • 1 seasoning cube
  • 1/2 teaspoon salt
  • 1 tablespoon flour mixed with 1/2 cup water
  • 1 egg, beaten for brushing

How to make it

  1. Mix flour, baking powder and salt.
  2. Rub cold butter into the flour until the mixture resembles fine crumbs.
  3. Add cold water gradually and form a firm dough; do not overwork it.
  4. Prepare the filling by dicing the vegetables.
  5. Heat oil and sauté onion.
  6. Add minced beef and cook until browned.
  7. Add curry, thyme, seasoning and salt.
  8. Add potatoes, carrots and a little water; cook until the vegetables are tender but not mushy.
  9. Stir in the flour slurry and cook until the filling thickens.
  10. Cool the filling completely.
  11. Roll the pastry and cut into circles.
  12. Place filling in the centre, fold and crimp the edges firmly.
  13. Brush with beaten egg and bake at 180°C for 30 to 35 minutes until golden.
