Nigerian Native Jollof Rice

A richly seasoned Nigerian rice dish cooked in palm oil, tomato and pepper sauce.

Ingredients

  • 3 cups long grain rice
  • 500 g assorted meat or smoked fish
  • 1/2 cup palm oil
  • 1 large onion, chopped
  • 3 medium tomatoes, blended
  • 2 red bell peppers, blended
  • 1 scotch bonnet pepper, blended
  • 2 tablespoons ground crayfish
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 2 seasoning cubes
  • 1 teaspoon salt
  • 4 cups meat or fish stock

How to make it

  1. Wash the rice until the water is mostly clear and drain.
  2. Season and cook the meat until tender, reserving the stock.
  3. Heat palm oil and fry half the onion for 2 minutes.
  4. Add blended tomatoes and peppers and cook for 10 to 12 minutes.
  5. Add crayfish, thyme, curry, seasoning, salt and stock.
  6. Add rice, stir once, cover tightly and cook on low heat for 25 to 30 minutes.
  7. Add cooked meat or fish during the final 8 minutes.
  8. Rest covered for 5 minutes, fluff gently and serve.
