Pepper Soup

Ingredients
- 700 g goat meat, chicken, fish or assorted meat
- 2 tablespoons pepper soup spice blend
- 3 Scotch bonnet peppers
- 1 medium onion
- 1 tablespoon ground crayfish, optional
- 2 seasoning cubes
- 1 teaspoon salt
- 1 teaspoon grated ginger
- 1 teaspoon minced garlic
- 5 cups water or stock
- 1 handful scent leaf, uziza or parsley
How to make it
- Cut the protein into bite sized pieces and rinse thoroughly.
- Place meat in a pot with onion, ginger, garlic, salt and seasoning cube. Add water and cook until tender.
- Add pepper soup spice and blended Scotch bonnet. Simmer for 10 to 15 minutes.
- Add crayfish if using and adjust the liquid to make a light, aromatic broth.
- Add scent leaf or uziza in the final 3 minutes.
- Taste and adjust seasoning. Serve very hot as a starter or with boiled yam, plantain or rice.
