Plantain Porridge

Ingredients
- 4 ripe plantains, peeled and cut into chunks
- 1 medium onion, chopped
- 2 red bell peppers, blended
- 1 scotch bonnet pepper, blended
- 3 tablespoons palm oil
- 1 tablespoon ground crayfish
- 1 teaspoon seasoning powder
- 1/2 teaspoon salt
- 2 cups water or light stock
- 1 handful ugu or spinach, sliced
- 200 g smoked fish or cooked meat, optional
How to make it
- Wash and prepare the vegetables.
- If using smoked fish, remove bones and break it into large pieces.
- Cut the peeled plantains into even chunks.
- Heat the palm oil in a pot over medium heat and add the onion.
- Add the blended pepper and cook for 5 to 7 minutes until the raw pepper smell reduces.
- Add crayfish, seasoning powder and salt.
- Add the plantain chunks and pour in the water or stock.
- Cover and cook for 18 to 22 minutes until the plantain is tender.
- Add the smoked fish or cooked meat during the final 8 minutes if using.
- Stir gently, add the sliced greens and cook for another 2 to 3 minutes.
- Taste and adjust seasoning before serving.
