Tuwo Shinkafa

A soft rice based swallow commonly eaten with northern Nigerian soups.

Ingredients

  • 3 cups short grain or soft rice
  • 6 cups water, approximately
  • 1/2 teaspoon salt, optional

How to make it

  1. Wash rice thoroughly and place in a heavy pot with water.
  2. Cook over medium heat until the grains become very soft and begin to break apart.
  3. Use a wooden spoon to mash and turn the rice while it continues cooking.
  4. Add small amounts of hot water if needed and keep turning until a smooth, thick paste forms.
  5. Cover and steam for 3 minutes, then turn again.
  6. Shape into portions and serve with miyan kuka, miyan taushe, okra soup or other northern Nigerian soups.
